This class is destined to be a spectacular and memorable experience for anyone that appreciates good food and exploration. It will appeal to visitors to Vancouver who are curious about local cuisine, to local food enthusiasts who want to know more about BC's rich heritage of cuisine and wine, or those who just want to get better acquainted with their kitchen!

Chef Ross has a wide range of One-Day programs to choose from (see below), and each program will follow this schedule:

Welcome: Participants will greet one another over a hot beverage, while Chef Ross unveils the day's menu and culinary adventure.

Hunting and Gathering: Participants will then be taken on a "hunting and gathering" excursion that will show off Vancouver's wonderful food markets, wine shops and bakeries while collecting the necessary ingredients for the afternoon's feast.

Cooking: We will then return to our commercial kitchen to prepare a sumptuous meal. As the meal is created, Chef Ross will share cooking

techniques that are applicable to the menu, and all participants will have the opportunity to get involved and practice. Each participant will be provided with the tools and accessories that are needed to complete their cooking assignments like a professional, or you can just watch.

The Feast: Of course, the cooking is followed by the feasting! A three-course lunch will be served in an elegant dining room where we can spend some time getting to know each other, talking about the morning's adventures and preparing for the afternoon culinary event.

Culinary Event: Each afternoon will involve a different culinary event that will expose one of Vancouver's best kept culinary secrets. Included in these afternoon events will be a visit to the best cheese shop this side of the Pyrenees, a guided tour "behind the scenes" in one of Vancouver's finest restaurants, an in-depth review of BC best wines, or perhaps a visit to a game purveyor where you can buy everything from alligator to musk ox. The possibilities are endless.
